    CUSTOM CAKE INFORMATION

    OUR INGREDIENTS

    Sublime Bakery uses the finest natural and organic ingredients available: organic cane sugar, unbleached flour, European-style butter, aluminum-free baking powder, pure vanilla, Belgian chocolate, fresh fruit. We bake from scratch, never using pre-made fillings and icings or highly extracted flavorings. We will not use artificial ingredients, trans-fats or preservatives in your cake. Our buttercream icing and fillings are made with pure butter only, not with shortening or a combination of the two like most other bakeries. We’re certain you will taste the difference. We offer natural gluten-free, sugar-free and vegan options. Our cakes are made using classic European techniques, are moist and dense, naturally flavored, and always fresh and delicious.

     PLANNING & ORDERING PROCESS

    We want to make designing your cake a fun and laid-back experience. Take some time to check out our website at your leisure, it’s filled with photos and information and is available to you 24 hours a day. Email us with any questions you may have. If you have a design in mind and know your minimum guest count, we can give you a ballpark estimate by phone or email, but please keep in mind that an exact quote requires that we go over every detail first. When you’re sure you want to secure Sublime Bakery for your party, we’ll work up a deposit and contract to secure the date, and then we’ll schedule the consult appointment. The deposit is 50% of the contract total and is estimated by multiplying your minimum guest count by our base rate per serving, the minimum deposit is $200. Once your design is chosen there may be a balance due on the deposit which will be payable at that time. Our availability is extremely limited and we do require that we have the deposit and signed contract before we schedule the consult appointment. If you have worked with us on other custom cake orders in the past this policy may be new to you. Once the deposit and contract are received you can rest assured that your event is locked in on our schedule. When you are ready to design your cake we will schedule your consult appointment. It is important that you have certain details locked down before we meet: venue location, time of party, theme/colors/”feel” of party, minimum guest count, and budget. In most cases Catherine will come to you for the design consultation as our current commercial kitchen space is not a walk-in retail shop. After this initial visit, we will email you a detailed design proposal with pricing information. Generally this one appointment and a few emails or phone calls is all it takes to design your cake. Please be absolutely sure you want to

    book with us, as the deposit is non-refundable and date-specific. Cakes ordered with less than

    30 days lead time require payment in full at the time of the order.

    Here are some things to consider before we meet for your

     design consultation:

    DESIGN

    Let your cake reflect who you are. If your style is classic and conservative you will want your cake to reflect these sensibilities. On the other hand, if you are a creative free-spirit, your cake should express your unique vision. Every cake we do is one-of-a-kind. We’ll be happy to

    design a cake based upon one you find in a book or magazine, but we will make adjustments to make the design our own, we don’t do exact copies.

    COLOR

    Color is a great way to add personality to your cake. You may incorporate a touch of color or go wild with it. If you choose buttercream icing for your cake we cannot make the icing pure white. Pure white icing requires the use of shortening and bleached vanilla extract, which we do not use. Our “butter only” buttercream icing is a lovely, soft creamy white.

    FLAVORS

    This is another area where you can show your personal taste (pun intended!). We use only “real” ingredients to flavor your cake and filling. We do NOT use little bottles of highly extracted flavorings. So, for example, if you want mocha flavor we use fresh brewed espresso and Belgian chocolate, not a bottle labeled “mocha flavor”. There are dozens of flavor combinations available to you. A complete list accompanies this packet. All of our flavors are

    available in gluten-free. We also offer Vegan cakes as well as sugar free cakes, and will make every effort to accommodate other special dietary needs. Please see the Custom Cakes Menu attached to this packet.

    PLEASE DON’T HATE THE FONDANT!!

    If you think you don’t like fondant you’ve probably had poor quality fondant or fondant that was applied to the cake improperly, or both! At Sublime we apply a thin layer of fondant over a full layer of buttercream. Our fondant is of the highest quality, is neutral in taste, and pleasantly sweet. When high quality fondant is used properly it should not interfere with the palatability of your cake.

    FLOWERS

    Flowers can be an important part of cake design. If you wish to incorporate flowers we recommend using hand crafted sugar paste flowers instead of fresh specimens. We have exceptional sugar artists who create flowers that are virtually indistinguishable from real blooms, and are much safer for use on cakes (and you can keep them indefinitely!). Some fresh flowers are treated with chemicals that should not come in contact with food items. If you decide to use fresh flowers please consult carefully with your floral designer. We will not place fresh flowers on your cake so you'll need to be sure that your florist is tasked with this detail.

    SIZE

    Keep in mind that your cake can really be any size you want it to be. Let's say your heart's desire is for a grand scale confection of 5 tiers but you only have 75 guests to feed. We can use Styrofoam "dummy" tiers iced and decorated to match the real cake tiers to add height. Our

    serving size is based on the industry standard of 1” by 2” and 4” tall (or taller). If you want your serving size to be larger you must order more cake.

    SUMMER EVENTS

    Summer weather in Texas is brutal on cakes. In order to insure that your cake will remain beautiful and structurally secure in the summer months, we use fondant over buttercream on all tiered cakes from April through September. We do not recommend displaying your cake outdoors during these months (a permanent tent structure is still considered “outdoors”),

    and we will not be responsible for your cake is you choose to do so. We will ask that you sign a release if you choose to have your cake stationed outside.

    PRICING

    We do not have a price list for our cakes, as each is a unique creation made to the particular client’s needs and wishes. Each cake has many variables. Generally speaking, buttercream iced cakes will start at $5 per serving ($6 for gluten-free and vegan), fondant and ganache at $6 per serving ($8 for gluten-free). Because of the individual attention given to each order we do have a $400 minimum order for custom cakes. Delivery charges start at $65 within Fort Worth. For deliveries outside of the 820 loop we will determine your delivery charge by adding a trip charge (based on travel time) to our base rate of $65. Certain dates on our calendar are designated as “Premium Dates”, in other words they are in very high demand. These dates vary from year to year and have their own minimum requirements and delivery charges. Premium Date cakes have a $1,000 minimum. All available Sundays are Premium Dates (not all Sundays are available, we only book a handful of Sundays each year).

    In addition to custom cakes, Sublime Bakery can provide Cupcakes and Custom Cupcake Towers and Party Favors for your event.

    SPECIAL DIETARY NEEDS

    Chef Ruehle believes strongly that everyone deserves to eat cake at their party regardless of dietary restrictions. To this end she has developed recipes for those with allergies or intolerances to gluten, dairy, sugar, soy and others, as well as vegan recipes for those who choose to avoid animal products. Let us know your restrictions and we’ll do all we can to create a delicious and beautiful dessert for you.

    ABOUT OUR OWNER AND EXECUTIVE CHEF

    Pastry Chef Catherine Ruehle likes a good challenge. A 5 foot tall STAR WARS themed wedding cake? No problem. A psychedelic 60's cake with a live goldfish swimming between the tiers? She can do that too. The tallest cake in Food Network Challenge history? Check!! Catherine's greatest joy comes from bringing her clients' dreams to life- in cake!

    Catherine credits her first restaurant boss and mentor, Chef Michel Nischan, with giving her the "big break" that turned a self-taught baker into a bona fide Pastry Chef. At Nischan's restaurant, Miche Mache, in Connecticut, her artistic eye and flair for innovative flavor combinations won a rave review from The New York Times.

    After Miche Mache, Catherine worked all sides of the food industry, including catering, restaurant management, cookbook publishing, and recipe development and testing. The 15 years experience combined with a life-long love of baking and a degree in Art History finally culminated in her dream job as Pastry Chef and Cake Designer.

    In 2008, Catherine launched Sublime, a retail bakery and cake studio in Fort Worth, Texas. In it's very first year the Bakery was awarded the "Best Birthday Cake", "Best Bakery", and "Best Cupcakes" honors by Fort Worth, Texas magazine. Chef Ruehle and Sublime Bakery are frequently featured in the local, regional and national media. Chef Ruehle is currently developing and testing recipes for her first cookbook, and is in the pre-production phase of a television project. She is a featured guest instructor at cake shops/schools in the US and Canada and is developing a series of classes for Central Market Cooking Schools in Texas. You can see her compete on Food Network Challenge in “Paranormal Cakes”, “Giant Wedding Cakes”, “Standup Comedy Cakes”, and “Extreme Dinosaur Cakes”.

    When she's not working, Catherine can be found spending time with her husband Van and their two sons, Cade and Case.

    FREQUENTLY ASKED QUESTIONS

    Q: I don’t really know what I should budget for my cake. I’m serving 150 people, can you give me some guidelines?

    A: Prices vary widely depending on the number of servings and the detail level of the design and structure. The bare minimum for the simplest design for a 150 people would be $750 for

    buttercream and $900 for fondant over buttercream, but on average, a Sublime Bakery cake for 150 people will run $1200-$1500. Please keep in mind that our minimum order is $400 for custom cakes ($700 for wedding cakes), so even if you’re only feeding 20 people, for example,

    your minimum will still be $400 for a custom cake.

    Q: I know I want to book you for my party but I’m still deciding on them and color, etc, so I’m not ready to design my cake yet. Can I still get on your calendar?

    A: Yes of course! We will estimate a deposit based on the estimated guest count. The minimum deposit is $200. Please be absolutely sure you want to work with us as deposits are date specific and non-refundable. We will need to nail down the details of your cake design at least 3 weeks prior to your event.

    Q: I follow a gluten free diet, but I really don’t want all of my guests to have to eat GF cake, what should I do?

    A: We often will do just one tier of the cake for special dietary needs and the remaining tiers conventional. Special dietary needs cake is more costly per serving than conventional, so this method saves money too. By the way, all of our Custom Cake flavors are available in gluten free.

    Q: I plan to use fresh flowers on my cake, should I have the florist deliver some extra flowers to you for the cake?

    A: We do not handle fresh flowers for the cake, you will need to make sure your florist will place flowers on the cake at the venue. We will need the florist’s contact information to coordinate delivery with them.

    Q: I would like to have cupcakes at my party rather than a traditional tiered cake, can you do that?

    A: Of course! We can do cupcakes and custom cupcake stands for weddings and other large events. The minimum order for cupcakes is 10 dozen.

    Q: Last year you did a simple Bakery Cake for my birthday, can I order one this year?

    A: I’m sorry but we no longer make Bakery Cakes, we are now a Custom Cake studio only.

    Q: My husband would like a 3-dimensional sculpted cake of his hunting dog for his birthday, can you do that?

    A: Absolutely! 3-D sculpted cakes are a specialty of ours. We will ask that you provide us with LOTS of photos to work from.

Q: Do you deliver?

    A: But of course! We will deliver and set up your cake at the venue but we do not cut or serve the cake, not do we provide plates, napkins, etc. for serving. You will need to make arrangements with your caterer or coordinator for these services/items. Delivery charges apply for all items and begin at $65 within the 820 loop in Fort Worth.
