LIQUID CONCOCTIONS

PB&B SMOOTHIE

    In a blender combine one banana, one heaping spoon of peanut butter, one cup of fat free

    vanilla yogurt, a healthy squirt of honey, 2 cups ice, and one cup of milk. Blend, this is

    delish!

MANGO LASSI

    Yummy refreshing yogurt drink. Goes great with spicy food.

    8 oz plain yogurt

    12 oz chilled mango (or papaya) nectar

    2 T brown sugar

    ? t ground gingerroot

    ? t vanilla extract

    Put all ingredients in a blender and puree until smooth. Serves 2-4. ~MaMary~

PICTIONARY PUNCH

    1 c. sugar

    1 c. water

    3 c. grapefruit juice

    3 c. orange juice

    3 c. pineapple juice

    ? c. lemon juice

    ? c. lime juice

    2 liters ginger ale, chilled

    In a saucepan, bring sugar and water to a boil; cook and stir for 2 minutes. Remove from

    the heat and cool. Pour into a large bowl and add juices. Cover and refrigerate. Stir in

    ginger ale just before serving. Makes 5 quarts. *Super yummy* ~Krisperry~

BREAD AND BREAKFAST

Mile High Pizza Crust (Bread Machine Compatible)

    1 ? c. water

    2 T olive oil

    2 t salt

    2 t sugar

    3 c. unbleached white flour

    1 c. whole wheat or whole grain flour

    4 t bread machine yeast

    Add water, olive oil, salt, sugar, flour and yeast in that order to bread machine. Set to Dough Cycle. This makes enough for two good size, thick crust pizzas. Dress pizza according to taste. Bake in oven on pizza stone. Or bake on the grill or smoker. You can use the baking stone for less crispy crust or directly on the grill for crispier crust. Sometimes, early in the day, after I make the crust, I bake it just for a few minutes. Just so it is slightly cooked all around and had a thin baked crust on it. I bring it inside and then I can prepare the toppings closer to dinner time. After this par-baking, you can freeze it, since it is semi-solid!

Blueberry Hill Muffins (serves 12)

    1 c. fresh or frozen blueberries (don't thaw if using frozen)

    1 3/4 c. whole wheat pastry flour plus 1 Tbsp (divided)--or can use unbleached white flour if you don't have pastry flour

    1/2 c. sugar (or use 1/4 cup honey)

    1 t baking powder

    1/2 t baking soda

    1 t ground nutmeg

    3/4 t salt

    1 egg

    1 c. sour cream (lowfat is fine)

    1/3 c. milk

    1. Preheat oven to 400 degrees

    2. Grease 12 regular muffin cups or liner with paper cupcake liners

    3. In small bowl, toss blueberries with the 1 Tbsp of flour & set aside 4. In large bowl, combine rest of flour, sugar, baking powder, baking soda, nutmeg & salt; set aside (Note: if using honey instead of sugar, add honey to wet ingredients instead of dry ingredients)

    5. In medium bowl, beat egg then stir in sour cream & milk. Stir the wet mixture into the flour mixture until just combined (batter will be lumpy).

    6. Stir in reserved blueberries very gently. Fill muffin cups 2/3 full of batter. Bake until golden, about 18-20 minutes :-)

TORTILLA OMELET

    Grease skillet. Lay in a tortilla that fits well and covers entire bottom of skillet. Scramble a few eggs and pour onto tortilla, add whatever else (cheese, ham, onions, etc) Cook on medium, once it is mostly cooked through, fold tortilla in half and finish cooking. I like to top this with mustard :)

VEGETARIAN BISCUITS AND GRAVY

    4 Morningstar Farms breakfast links or patties, or other vegetarian sausage 2 T butter or margarine

    2 T flour

    1 c. milk

    ? c. vegetable stock or water

    Salt, pepper, and cayenne

    Eggs

    Grated Cheddar cheese

    Your favorite biscuits

    Cook sausage in a little bit of oil, crumbling it as it cooks. Melt butter in a small saucepan, add flour and cook 1 minute. Whisk in milk and stock, bring to a boil. Add salt, pepper, and cayenne to taste. Stir sausage into gravy. Fry or scramble some eggs. Layer 1 split biscuit, 2 eggs, and some gravy. Sprinkle with cheddar cheese. ~MaMary~

Banana Bread

    1 c. sugar

    1 egg

    1? c. flour

    ? c. butter, melted

    1 t soda

    ? t salt

    3 bananas (overripe is best) mashed

    chopped nuts (optional)

    Cream together the sugar and melted butter. Add egg and beat well. Add bananas. Stir in flour and mix well. Stir in nuts. Pour into greased loaf pan. Bake one hour at 350. ~Cobbmommy~

CAKE WALK:

Out of the Ordinary Orange Cake

    1 box yellow cake mix

    1 small box orange jello

    1 t lemon extract

    2/3 c. oil

    2/3 c. water

    3 eggs

    Mix well. Bake in prepared bundt or regular cake pan at 350 for 45 to 50 minutes. Take out. Poke holes in cake with toothpick. Drizzle the icing over the cake slowly so that it

    can go inside the cake. Sometimes I take the cake out of the pan when cool, poke holes on the top o fthe cake, and drizzle icing over the top also.

Out of the Ordinary Orange Icing

    1 to 2 cups powdered sugar mixed to a thin consistency with orange juice.

    Variations: May replace orange jello and orange juice with lemon jello and lemon juice to create an Out of the Ordinary Lemon Cake and Icing

Banana Cake

    From “The Quaker Oats Allergy CookBook”

    Wheat, Milk and Egg FREE

    2 c. ground oat flour

    1 c. mashed ripe banana

    2/3 c. sugar

    2 eggs (I use Egg Substitute, see below *)

    1/4 c. oil

    1 t soda

    1 t cinnamon

    3/4 t salt

    1/4 t cloves

Heat oven to 350 degrees. Combine all ingredients in large bowl, mixing well. Pour into

    greased 9 inch square baking pan. Bake at 350 degrees for 25 to 30 minutes. Cool completely.

    * To make this recipe egg free, I use the following ingredients instead: 3 Tablespoon Water, 3 Tablespoon Oil

    2 teaspoon baking powder

    Mix separately and use right away

Busy Day Chocolate Cake

    2 2/3 c. flour

    6 T cocoa

    2 t salt

    2 t soda

    2 c. sugar

    2 t vanilla

    2 T vinegar

    2 c. water

    1 c. vegetable oil

    Place all ingredients in mixing bowl and mix. The batter will be thin. Bake in a 9x13 pan

    about 40 minutes at 350ºF.

Three Layer Red Velvet Cake

    1 c. butter (or 1 c cooking oil) 2 c. sugar

    2 eggs

    1 T vinegar

    1 T cocoa powder

    2 oz red food coloring

    2? c. flour

    1 c. buttermilk

    ? t salt

    1? t baking powder

    1 t vanilla

    Cream butter and sugar. Then add eggs, vinegar, cocoa, and coloring and beat well. In a

    separate bowl, add salt and baking soda to the flour and mix well. Add flour, buttermilk,

    and vanilla to sugar mixture and beat again. Divide into 3 pans and bake each at 350

    degrees for 25-30 minutes. Cool layers and frost.

Red Velvet Cake Frosting

    1 stick margarine

    1 8 oz bar of cream cheese

    1 box of confectioners sugar

    1 t vanilla

    1 c. of chopped nuts

    Mix all ingredients together except nuts and spread between layers and over cake.

    Sprinkle nuts over the top.

Fruit Cocktail Pudding Cake

    1 c. flour

    1 c. sugar

    1 t salt

    1 t soda

    1 egg

    1- 16 oz. fruit cocktail with juice

    Mix together the above and pour into 8 x 8 or 9 x 9inch pan. Sprinkle on top 1/3 cup brown sugar and 1/3 cup nuts. Bake at 325ºF for 40 minutes.

Caramel Brownies

    1 pkg. Kraft caramels 14 oz

    1- 6 oz pkg. chocolate chips

    2/3 c. evaporated milk

    1 stick margarine, melted

    Grease and flour a 9x13 cake pan. Melt caramels and 1/3 C milk, stirring constantly. Set aside. Mix cake mix, melted margarine, and 1/3 cup milk until it holds together. Place half of the mixture in pan. Pat firmly with hand. Bake at 350 for 7 minutes. Remove and sprinkle with chocolate chips. Add caramel mixture. Place rest of mixture over top (mash into pieces and put on top). Bake at 300 for 15-20 minutes don't over bake. Cool. Refrigerate before cutting.

DELECTABLE DESSERTS & SAVORY SNACKS

Tyler's Sugar Cookies

    1 1/4 c. sugar

    3 c. flour

    1 t baking soda

    1 t salt

    1 c. soft butter

    3 beaten eggs

    1 t vanilla

    Mix dry ingredients first, add wet and form into a ball. Chill 1-3 hours until firm. Roll out to ? inch thick on lightly floured surface. Cut into desired shapes, Bake at 400 degrees for 5-6 minutes. Test to see if done by gently prodding with a firm spatula. Cookies are done when they hold their shape and the edges have not yet turned brown. ~TyandTorismom~

Oh So Easy Brownies

    2 sticks butter

    8 T cocoa

    2 c. sugar

    4 eggs

    1 c. flour

    2 tsp. vanilla

    2 c. chopped nuts

    Melt butter in saucepan. Take of fire and add cocoa, sugar, and eggs. Beat well, then add flour, vanilla, and nuts. Bake 25 minutes in a 325 oven. I use a 9x14 metal pan. If you use Pyrex, bake only 20 minutes.

Chocolate Glaze

    Melt 4 oz. semisweet chocolate, cut up and 3 Tbsp. butter or margarine over low heat, stirring frequently. Remove from heat. Stir in 1 1/2 c. powdered sugar and 3 Tbsp. hot water. Stir in additional hot water if needed to reach desired consistency. This recipe is for cake frosting, but I think it is perfect for brownies.

PEANUT BUTTER CHEX

    3 T creamy peanut butter

    3 T honey

    4 c. rice Chex cereal

    Melt peanut butter and honey together. Mix with cereal. Spread on cookie sheet coated with cooking spray. Bake at 175* for 1 ? hours, stirring twice during baking. Cool completely. Store in an airtight container.
